Christmas Tree Biscuits

Try making these rock-hard Christmas Tree biscuits with your children. The uncooked dough tastes wonderful, so do not expect the impossible!


50g butter

1 cup honey

3/4 cup brown sugar

1 Tbsp lemon juice

1 Tbsp finely grated lemon rind

2 tsp cinnamon

1 tsp ground cloves

1 tsp nutmeg

1 tsp allspice

1/2 tsp baking soda

3-4 cups flour


Measure all the ingredients except the baking soda and flour into a medium-sized saucepan. Stir over a low heat until all the ingredients are blended and the sugar is no longer grainy. Do not boil. Remove from the heat and cool to room temperature.

Stir in the baking soda sifted with 1 cup of the flour. Stir well the add more flour, about half a cup at a time, until the dough is firm enough to roll out on a floured board. The more flour you add the harder and longer lasting the biscuits will be.

Roll out dough to about 5mm thick and cut into interesting shapes, using biscuit cutters, etc. Before cooking, pierce a hole to thread red ribbon or wool through later. (A gently twisted straw makes good holes).

Bake at 170°C for about 10-20 minutes, or longer, until the edges brown lightly. (Longer baked biscuits are harder.) Cool on a rack.

Leave plain or decorate as desired with water icing, or make white icing by whisking the remaining egg white until foamy, then adding sifted icing sugar 1/2 cup at a time until the mixture is firm enough to pipe through a fine nozzle, then use to decorate the biscuits. (If you don’t have a forcer bag and nozzle, snip a tiny small corner off a sturdy plastic bag and use this instead.)
